I'm always looking for ways to get vegetables into my kids. Tonight THEY suggested I make this recipe. I figured they didn't really know what the ingredients were, but they just liked the name and drawing next to the recipe. I went ahead and made it wondering how many noses would be turned up at meal time. Surprise, surprise! Not a one. My 9-year-old son had 5 servings!!
Here's the recipe:
Confetti Meatloaf
1 1/2 lbs lean ground beef
5 oz fresh spinach, finely chopped (mine wasn't even that fine- which I thought might throw off my kids)
2 carrots, grated
1 TBSP worcestershire sauce
1 egg, beaten
3/4 c vegetable or tomato juice (divided) (I didn't have either, so I used tomato paste with equal parts water)
1/4 c parmesan cheese
1/4 c dry bread crumbs
1/4 c onion, finely chopped
1/4 tsp salt
1/4 tsp pepper
1/4 c ketchup
1. In a small bowl combine 1/4 c vegetable juice and ketchup. Set aside.
2. Combine remaining ingredients, mix well, and place in a 1-quart loaf pan.
3. Bake at 350 degrees for 50-55 minutes.
4. Top with reserved juice mixture during last 5 minutes of cooking.
